Block & SaltBlock & Salt (sample business) · live demo · in design review

Provenance

The farm on every label.

We know the farmer, the breed and the field, and we buy the whole animal.

Native-breed cattle grazing a hillside pasture between dry-stone walls

Our three farms

  • Native-breed cattle grazing a hillside pasture between dry-stone walls

Hollow Farm · Longhorn beef, 40 minutes away

The Hendersons keep forty Longhorn cows on permanent pasture above the Slad valley, grass-fed all their lives and finished at about thirty months. We take one animal a fortnight and hang the ribs and loins for 35 days in our own cabinet.

  • Gloucester Old Spot pigs rooting under apple trees in an autumn orchard

Ridge Farm · Gloucester Old Spot pork

Outdoor-reared in the orchards at Ridge Farm, eating windfalls in the autumn, which is why the fat on the belly is so sweet. Two pigs a week, cut, cured and made into sausages here.

  • Herdwick sheep on a rocky fellside between dry-stone walls

Fell Side · Herdwick lamb, in season

Herdwick from a fell farm in the Lake District, the one supplier we cannot drive to in an hour. Lamb from September to Christmas, hogget in spring; whole animals only.
